Schloss Wallhausen is an impressive castle where the ‘real’ nobles still hang out and wine is being made from the year 1200. The change of generations in the family Salm is in full swing. One son does the finances, the other the wine and the paterfamilias sees all goes well. Prinz Felix is the kellermeister (cellar master) and has changed course. After a visit from Hugh Johnson, the great wine guru, it became clear that the winery had too many variations. Prince Felix now separates Riesling which grows on green from the one which grows on the red slate. He makes two different wines of it where they were blended in the past. We taste the two wines next to each other and find out that the one of the green slate riesling is more modest and more restrained (more acidity) and the other of red slate has much more expressive and fruity aromas. With his jeep Felix takes us to the various slate vineyards. He tells us a lot and is really inspiring. With his hands in the earth, he shows us how much work is being done on the land and how intense wine growing is.
